Adas Polo


Translating literally from Farsi, Adas Polo means “Lentils and Rice.” This delicious dish requires a special Persian Rice Cooker that has a non-stick internal bowl.

Ingredients
  • 2 cups white or brown Basmati rice
  • 1 cup brown or green lentils
  • 1/4 cup vegetable or canola oil
  • 3 1/2 cups water
  • 1 cup dates, pitted
  • 1/2 cup raisins
  • 2 teaspoons cinnamon
  • 1 pinch saffron
  • 1/2 cup boiling water

Instructions:
1. In the pot of your Persian Rice Cooker, combine basmati rice and lentils. Pour in the oil and water, and put the lid on the pot. Turn on the rice cooker and let it cook for 30 minutes.

2. Remove the cooked rice and lentils.

3. If you want to add bread or potatoes to make tadig, click here for the tadig recipe. Otherwise, continue to the next step.

4. Place a layer of the rice mixture in the bottom of the rice cooker, then sprinkle some dates, raisins, and a little bit of cinnamon over it. Add another layer of the rice mixture, and repeat. Make 3 or 4 layers.

5. Place saffron in a bowl of boiling water and let it steep for about 5 minutes. Pour it over the contents of the rice cooker.

6. Cover and cook for another 20 minutes or so. By now the smell should be making your mouth water, but if you like the bottom especially crispy, let it cook longer.

7. When done cooking, put a large plate over the top of the rice cooker and invert the Addas Polo onto the plate. Serve with masto khiar.
