Algerian Chicken

Ingredients
  • 2 pounds chopped chicken
  • 1 cup chicken broth
  • 1 large onion, sliced into rings
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 1 parsnip, sliced
  • 1 eggplant, peeled and cut into cubes
  • 1 can or 2 medium tomatoes
  • several sprigs parsley
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 6 servings prepared couscous

Instructions:
1. In a skillet or pot with a lid, place chicken, broth, onion, and garlic. Simmer for fifteen minutes or so.

2. Drain excess broth and add carrot, parsnip, and eggplant. Cover and cook for another five minutes.
3. Add tomatoes, parsley, paprika, salt, and cayenne pepper. Stir and keep warm until ready to serve.
4. Serve the chicken stew over the couscous.
