Algerian Couscous
Couscous is the national dish of Algeria. It is usually prepared with vegetables and served with chicken or another meat.

1 cup couscous
2 cups vegetable broth
2 teaspoons turmeric
1 teaspoon cinnamon
1/2 teaspoon cloves
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 teaspoon salt
1 carrot, sliced
1 onion, chopped
1 stalk celery, sliced
1 potato, cubed
1 green bell pepper, chopped
1 can chickpeas or 1 cup dried prepared chickpeas
1 can stewed tomatoes or 2 fresh tomatoes, diced
1/4 cup parsley
1. Bring couscous and vegetable broth to a boil with turmeric, cinnamon, cloves, cayenne pepper, black pepper, and salt. Reduce heat to medium-low.
2. Add carrot, onion, celery, potato, bell pepper, chick peas, and tomatoes. Cover and continue to cook, stirring occasionally.
3. Add parsley.
4. Enjoy with harissa.
