Bavarian Kartoffelsalat
Meaning potato salad, kartoffelsalat is found in different varieties all over Germany. This version is especially popular in Bavaria and the rest of southern Germany.

4 or 5 large boiling potatoes
1/2 cup vegetable or chicken broth
1 onion, minced
3 tablespoons dijon mustard
1/4 cup white wine vinegar
1/4 cup olive oil
2 or 3 chives or green onions, minced
1 teaspoon salt
1/2 teaspoon black pepper
1. Boil potatoes in water until they are tender enough to pierce with a knife.
2. Drain and let cool. Slice the unpeeled potatoes into large cubes.
3. Mix with the broth, onion, and mustard. Pour vinegar and olive oil over potatoes and stir.
4. Add chives, salt, and pepper. Mix to combine.
5. Serve hot or cold.
