1. Have a glass bowl or round baking pan. You will need this as soon as the caramel sauce is ready.
2. To make caramel sauce, place 1 cup sugar in a small saucepan and turn to medium-high heat. Stir until sugar melts. This will take a little while. Once the sugar becomes completely liquefied, continue stirring until it becomes a brown color.
3. Immediately pour into the bottom of the baking dish and rotate dish so that the caramel coats the sides.
4. Preheat oven to 350 degrees.
5. Mix eggs, milk, ¾ cup sugar, cinnamon, and vanilla. Pour into the baking dish with hardened caramel.
6. Place bowl inside a larger baking dish or broiler pan. Pour boiling water so that it surrounds the dish of flan. This is called a
Baño de María, also known as a water bath.
7. Bake for 30 to 45 minutes or until set in the center.
8. Chill for a few hours.
9. When ready to serve, place a plate over the top of the dish containing the flan. Invert the dish so that the flan comes out upside-down on the plate with the caramel sauce on top of it.
