French Onion Soup
French Onion Soup is a rich, hearty soup which is traditionally served with a piece of cheese toast floating at the top of the bowl.

2 tablespoons butter
1 onion
2 cups vegetable or beef stock
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon thyme
2 teaspoons sage
1/2 teaspoon marjoram
1/3 cup white wine or sherry
5 slices french bread
1 cup gruyere cheese, grated
1. Slice onion vertically, or pole-to-pole.
2. Melt butter in a skillet or saucepan. Sautee onion until it is browned.
3. Add stock, salt, pepper, thyme, sage, marjoram, and wine.
4. Place grated cheese on French bread. Melt below a broiler.
5. Ladle the soup into individual bowls or ramekins. Float the cheese bread on top of the soup. Serve hot.
