Ful Medammes
This dish of fava beans is one of Egypt’s national dishes. It is eaten at all times of the day and variations have spread to other parts of Africa and the Middle East, including Ethiopia, Samalia, Syria, Iraq, and Saudi Arabia.

1 pound dried fava beans
Juice of 1 lemon
4 cloves garlic, crushed
1 onion, finely chopped
2 teaspoons red pepper flakes
Extra virgin olive oil to taste
Minced parsley to taste
2 hard boiled eggs, sliced (optional)
Pita bread or other Egyptian bread
1. Rinse the beans and soak them overnight.
2. Heat them to a gentle boil and cook them for at least an hour, or until tender. Drain but reserve the liquid. Mash the beans slightly and add about half the liquid. Return to pot.
3. Add lemon juice, garlic, onion, and red pepper flakes. Cook on low for another hour or so.
4. Garnish with extra virgin olive oil and parsley. Serve warm with hard boiled eggs and bread.
