Gages Salad
Gages is a salad from Sierra Leone made with eggplant, red onion, and tomatoes.

2 tablespoons butter
1 large eggplant, sliced
1/2 red onion, chopped
Pine nuts to taste
Slivered almonds to taste
1 red bell pepper, diced
3 tomatoes, diced
1/3 cup balsamic vinegar
1/3 cup extra virgin olive oil (EVOO)
2 teaspoons red pepper flakes
1. Sautee eggplant in butter for about 7 minutes, or until almost tender.
2. Add red onion and cook for another 3 minutes.
3. Toast pine nuts and almonds on a baking sheet below a broiler until lightly browned.
4. Toss together eggplant and onions, toasted pine nuts and almonds, along with bell pepper, tomatoes, balsamic vinegar, EVOO, and red pepper flakes.
