Ingredients
  • 2 cups vegetable broth
  • 1 carrot, sliced
  • 1 red bell pepper, diced
  • 1 orange or yellow bell pepper, diced
  • 1 14-ounce package soft tofu, cubed
  • 1/2 cup fresh mushrooms, sliced
  • 1 15-ounce can baby corns
  • 1 8-ounce can water chestnuts
  • 1 8-ounce can bamboo shoots
  • 1 cup fresh bok choy
  • 1 tablespoon kung pao sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar

Instructions:
1. In a cooking pot, combine broth, carrots, bell peppers, tofu, mushrooms, baby corns, water chestnuts, and bamboo shoots. Simmer over medium heat for 10 minutes.
2. Add bok choy and stir until the leaves have reduced in size. Add kung pao sauce, soy sauce, rice vinegar and mix to combine.
3. Serve with steamed rice.
