Hummus


Hummus is one of the most ubiquitous dips in the Middle East and its popularity has spread throughout the world. This authentic recipe makes a hummus that is truly divine. Many different combinations of spices and flavorings can be added to hummus, so don’t feel bound to what is in this recipe. Experiment and share your creative ideas with us!

Ingredients
  • 1 cup dried chickpeas or 1 can chickpeas
  • 2 cloves garlic
  • 1/2 cup tahini
  • 1/2 cup extra virgin olive oil
  • 2 teaspoons za'atar
  • salt to taste
  • pepper to taste
  • 1/4 cup pine nuts (to garnish)
  • Parsley (to garnish)

Instructions:
1. Prepare the dried chickpeas according to the method found here. If using canned chickpeas, continue to the next step.

2. Drain chickpeas but reserve the liquid. Combine them in a food processor or blender with garlic, lemon juice, and tahini. Add liquid from chickpeas and olive oil until the consistency becomes smooth.

3. Add za’atar, salt, and pepper and combine.

4. Garnish with pine nuts, parsley, and olive oil.
