Ingredients
  • 2 tablespoons peanut oil
  • 3 eggs, beaten
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 leek, sliced
  • 1 head cabbage, shredded
  • 1 carrot, sliced
  • 2 large shitake mushrooms, cut into strips
  • 1 red bell pepper, diced
  • 1 can sliced bamboo shoots
  • 2 green onions, sliced
  • 1 cup bean sprouts
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons sherry
  • 1/4 cup plum sauce

Instructions:
1. Heat peanut oil in wok or large frying pan.

2. Scramble eggs.

3. Place onion, garlic, and ginger in wok along with eggs, and sauté.

4. Add leek, cabbage, and carrot, and cook for several minutes.

5. Add mushroom, bell pepper, and bamboo shoots.

6. Place green onions and bean sprouts in pan and toss to combine.

7. Add rice vinegar and sherry. Cook for another minute and remove from heat.

8. Use the Chinese Pancakes that you prepared. You can also use store-bought flatbread, but it is much better homemade. Spread a spoonful of plum sauce on each pancake. Place mu shu on pancake and fold or roll it.

9. Serve with extra plum sauce.
