Ingredients
  • 4 fresh red bell peppers or 1 jar roasted red peppers
  • 3 cloves garlic
  • 3/4 cup crumbs from a loaf of bread
  • 1 tablespoon red chili paste
  • 3 tablespoons Pomegranate molasses
  • Juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 cup walnuts
  • Mint leaves for garnish

Instructions:
1. If using fresh red peppers, roast them on a grill or below a broiler until the skin is blackened. Remove the skin, stem, and seeds.

2. Combine red peppers and garlic in a food processor and process until smooth. Add bread crumbs, red chili paste, pomegranate molasses, and lemon juice. Add some olive oil until you achieve the desired consistency.

3. Add walnuts and process briefly.

4. Garnish with mint and extra olive oil. Enjoy with warm pita bread.
