Nigerian Peanut Soup
This simple soup of tomatoes, peanut butter, and brown rice is surprisingly tasty.

1 tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
1 15-ounce can diced tomatoes
1 cup fresh spinach
6 cups vegetable broth
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1/3 cup crunchy peanut butter
2/3 cup brown rice
1. Heat the olive oil and sautee the onion and garlic. Add tomatoes, spinach, stock, pepper, chili powder, and salt.
2. Cook, over medium low heat, stirring occasionally, for ten minutes.
3. Add peanut butter and rice. Cook for fifteen to thirty more minutes.
