North German Kartoffelsalat
The northern German version of kartoffelsalat (potato salad) is similar to the potato salad enjoyed in the United States.

2 pounds boiling potatoes, yellow or red-skinned potatoes are best
1 cup broccoli florets
1 red onion, chopped
2 cloves garlic, minced
1/4 cup parsley, chopped
2 stalks celery, sliced
1 cup mayonnaise
2 tablespoons pickle relish
1 tablespoon Dijon mustard
1 teaspoon mustard powder
1 tablespoon white wine vinegar
Salt to taste
Pepper to taste
4 hard boiled eggs, sliced
1. Peel potatoes, or if you prefer you can leave the skins on. Boil the potatoes until they are soft enough to pierce with a butter knife.
2. Drain and cool the potatoes. Cut into cubes.
3. Mix potatoes, broccoli, onion, parsley, garlic, celery, mayonnaise, pickle relish, mustard, mustard powder, vinegar, salt, and pepper. Mix in the hard boiled eggs last so they don’t all break.
4. Refrigerate and enjoy cold.
