Pesto
Pesto is a versatile and undeniably delicious Italian condiment. Spread it on fresh bread, use it as a sauce for pasta, or add it to soups and other dishes.

4 cloves garlic
3 cups fresh basil
1 cup parmesan cheese
Freshly ground black pepper to taste
Salt to taste
Extra virgin olive oil as needed (approx. 1/2 cup)
1/2 cup sun dried tomatoes (optional)
3/4 cup pine nuts
1. In a food processor, combine basil and galic. Process well to make sure there are no large chunks of garlic. Add parmesan cheese, salt, and pepper. Add olive oil, a little at a time, until a thick, smooth paste is achieved.
2. Add sun dried tomatoes and process slightly. Add pine nuts. Process just enough to distribute the pine nuts, but do not overdo it. If the pine nuts become too small, their flavor will be overpowered.
