Ingredients
  • 2 cups short grain white rice
  • 3 tablespoons sesame oil
  • 2 eggs
  • 1 yellow onion, chopped
  • 1 green onion, minced
  • 1 red bell pepper, cut into diamond shapes
  • 1 green bell pepper, cut into diamond shapes
  • 1/2 cup cashews
  • 1 cup canned or fresh pineapple
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon white pepper

Instructions:
1. Prepare rice in a rice cooker or according to the Steamed Rice Recipe.

2. In a wok or large frying pan, heat oil over medium heat.

3. Scramble the eggs.

4. Add the onion and green onion, and fry for several minutes.

5. Add the red and green bell peppers and the cashews. Continue to stir until the onions are tender. Place the pineapple into the pan as well and combine with other ingredients.

6. Add the prepared rice, and mix with the ingredients in the pan.

7. Season with soy sauce, hoisin sauce, and white pepper. Adjust the quantities according to your taste.

8. Enjoy as a side dish or as the main course.
