Pita Bread
Making your own pita pockets is easier then you might think.
 
1. Stir together the yeast, sugar, and warm water. Let sit for fifteen minutes.
2. Mix together the whole wheat flour, all purpose flour, and salt in a bowl. Pour the yeast water into the center of the flour.
3. Mix to combine, adding more water until the dough comes together. Kneed the dough for ten minutes.
4. Coat the sides of a bowl with the oil. Place dough in bowl, cover it, and let rise for three hours.
5. Preheat oven to 500 degrees with a baking sheet inside it.
6. Form dough into small spheres and roll them out. They should be about ΒΌ inch thick. Open the oven and put the pita on the preheated baking sheet. Let it bake for 3 minutes then flip it and bake for another 2 minutes.
7. Enjoy with hummus, baba ghanoush, and other spreads. It is also perfect for falafels and other pita pocket sandwiches.
