Swedish Pancakes
Swedish pancakes are thin, like crepes, and must be served with Lingonberry jam. Lingonberries are native to Scandinavia and are eaten with many Norweigan, Finnish, and Swedish dishes.

2 cups flour
2 cups milk
3/4 cup granulated sugar
2 eggs
Lingonberry jam as desired
Whipped cream as desired (optional)
Butter as desired (optional)
1. Make batter by gently mixing flour, milk, sugar, and eggs.
2. Heat a large skillet or round griddle. Pour just enough batter on skillet to cover the entire surface.
3. Cook until bottom side is golden brown and flip.
4. Spread lingonberry jam thickly on the pancake and roll it into a tube.
5. Top with whipped cream or butter.
