Ingredients
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon  Ground Cumin
  • 1/2 teaspoon  Ground Corriander
  • 1 teaspoon Tumeric
  • 2 teaspoons Curry Powder
  • 1 Onion, chopped
  • 3 cloves Garlic, finely chopped
  • 1/2 teaspoon Cayenne Pepper
  • 1/2 teaspoon Black Pepper
  • 2 teaspoons Salt
  • 1 Bay Leaf
  • 1/2 cup Water
  • 2 Carrots, sliced
  • 1 Potato, cubed
  • 2 Large Tomatoes, diced
  • 1 1/2 cups Fresh Spinach

Instructions:
1. Hint: rinse, cut, and prepare all vegetables before starting to cook so they will be ready when you need them.
rn2. Heat the oil in a large frying pan at medium heat. Add cumin, coriander, turmeric, coriander, and curry powder. Cook for a minute or so.
rn3. Add onion and garlic. Cook, stirring occasionally, until onion is tender.
rn4. Add cayenne pepper, black pepper, salt, bay leaf, water, carrots, and potato. Simmer until carrots are almost tender.
rn5. Add tomatoes and spinach, cover, and continue cooking for about 5 more minutes.
rn6. Stir again and remove bay leaf.
rn7. Serve with rice or Indian bread.
